We got some beautiful seasonal veg in our Veg Box from Nethergong Nurseries this week including Kale, Picasso Potatoes, white onions, Bunched Carrots, Leeks, Curly Kale, Swiss Chard, Cauliflower and Radishes (all grown in East Kent and delivered to our door for just £10 a week!). A few years ago, when I was a student, I saved money by living with an elderly lady and helping out with cooking and cleaning. Her favourite meal was boiled leeks, wrapped in ham and baked with tomato sauce – she taught me to make it exactly how she liked it and although it sounded pretty awful, it was surprisingly great comfort food. The trick was in making sure the water you boil them in is well salted. This recipe is a kind of posh version of that idea and there’s something weirdly satisfying about pushing egg yolks through a sieve… Keep an eye on the leeks, it’s easy to over-cook them and turn them to mush.
