Scallops with Smoky Aubergine and Buckwheat

Testing out some new recipe ideas with new season local scallops. Served here with roasted buckwheat porridge, charred aubergine purée, salted yoghurt and a fresh herb oil. A few refinements to be made but totally delicious.
